Tuscan Corn Sauté

I've been ordering Home Chef lately because I've had some coupons for it! I love it. I think my favorite part of it is, it pushes me out of my comfort zone. I'm not a "recipe user" by any means. I usually just throw together what I have or have the "recipes" my mom used to make engrained in my brain that I make. I like the fact that you're given the ingredients you need (I despise grocery shopping) & can add your own flare to whatever they suggest! This recipe came from the last "Home Chef" delivery I got.

Here is the Tuscan Corn Sauté many of you asked for! It's delicious! Especially with a steak! :)


1 t. Olive Oil

2 Ears Fresh Corn, cut off the cob

1 Clove Fresh Garlic, minced

1 Heaping Handful Baby Spinach

Pinch Salt & Pepper

1/4 C. Grated Parmesan


Add olive oil to a skillet over medium high heat. Add in fresh corn to hot pan and stir occasionally until corn is lightly browned, 2-3 minutes. Add garlic and spinach. Stir occasionally until spinach is wilted, 1-2 minutes. Remove from burner and stir in salt, pepper & grated parm! Enjoy :)
