Roasted Potatoes


8 Small Yukon Gold Potatoes

1 T. Olive Oil

1 t. Salt & Pepper

1 t. Dried Thyme


Preheat oven to 425F.

Line a baking sheet with foil or parchment paper.

Wash potatoes and cut into quarters - leave skin on.

Blot each potato piece with a paper towel & put in a bowl.

Pour oil over the potatoes.

Add seasonings & toss WELL.

Put potatoes on the baking sheet (make sure the potatoes aren’t touching each

other – if they are, they will “steam” and not crisp).

Put in the oven and bake for 45 minutes.

Serve & Enjoy!
