Lindsay's Casserole

THE best chicken casserole out there! I've always found Chicken Casseroles that I like, but never have loved. So, one day I was looking through some chicken casserole recipes & combined ingredients from different ones, as well as took some ingredients out & added some of my own. Now, it's our go to chicken casserole! WE LOVE IT! Hope you do too! :-)


4 Chicken Breasts, Boiled

1 Frozen Pkg. Steamfresh Broccoli

1 Can Cream of Chicken Soup

1 C. Shredded Cheddar Cheese

8 oz. Sour Cream

1 Pkg. Long Grain & Wild Rice

1 Pkg. Ritz Crackers

2 T. Poppy Seed (more if desired)

1 Stick Butter, Melted

Boil Chicken. After cooled, chop into small cubes.

Cook Rice to packages directions.

Microwave broccoli & set aside.

Combine cubed chicken, rice, broccoli, sour cream, cream of chicken soup, half of the poppy seeds and salt and pepper.

Pour this mixture into greased casserole dish.

Melt the one stick of butter. Put Ritz crackers into big ziplock bag & crush. Mix the butter and crackers along with the remaining poppy seed. Sprinkle all across casserole.

Bake @ 350 Degrees For 30-45 Minutes.
