Crustless Sausage Quiche | Make Ahead Breakfast


16 Eggs

1 1/4 C. Heavy Cream

Hefty Pinches of Salt & Pepper

2 lbs. Sage Sausage

2 C. Shredded Mild Cheddar

1 lb. Fresh Spinach

2 C. Frozen Diced Potatoes 


Brown Sausage in a large skillet, set aside when cooked through. Add potatoes to the same skillet, season with salt and pepper - brown the potatoes until golden brown. Add spinach and cook until wilted. 

Cool skillet mixture.

Whisk eggs very well. Add salt, pepper and heavy cream and mix. 

Stir all ingredients together and add in cheese. Put in the fridge and leave overnight. 

When ready to bake, preheat your oven to 350 and bake for 25-30 minutes. When it doesn't jiggle in the middle, it's ready! :)
