Peanut Butter Banana Muffins

INGREDIENTS:

4 ripe bananas

1/4 cup peanut butter

3/4 cup coconut oil

2 large eggs (room temperature)

1 teaspoon vanilla extract

1/4 cup honey

2 cups old fashioned rolled oats

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

cooking spray or muffin liners

DIRECTIONS:

Preheat oven to 350ºF. Fill a 12-cup muffin tin with cupcake liners.

In a blender, add the bananas, peanut butter, oil, honey, eggs, vanilla, oats, baking powder, soda and salt. Place wet ingredients together first in your stand mixer and use paddle attachment to mix well. Add in dry ingredients and mix on low speed until just combined. Scrape sides, repeat on low speed just for a second.. Divide batter evenly between muffin liners.

Bake for 20 minutes until golden-brown and cooked through.

Helpful Tip: keep ingredients on hand in the pantry

for an easy snack or breakfast!
